You might want to add Opus to your short list. They make pop-up tent campers for off-road use and have a portable toilet and a shower (with hot water) in a tent. So technically not a bathroom but will allow oyu to do your bathroom duties. I’m not about to down-size to a pop-up but if I did it would be an Opus.

We replaced our OTR microwave with a regular GE microwave. We have regular sized appliances in our camper so a 30″ microwave fit perfectly and was easy to install.
::We live FT in our RV. Have a compact Whirlpool stackable washer/dryer. It’s 23.875″ wide. The dryer is 120v so it plugs right in to a standard outlet. It does take longer to run a dry cycle than a 240v. ALso its vented, somethign to keep in mind in your setup. There are ventless models if you cant vent but they typically take even longer to dry and produce more humidity.
All in all, we are happy with the brand and set up.
::We full time so a good mattress is important to us. We decided on a ghostbed mattress and we love it. We got the short queen, 10″ one.
::I live FT in my RV. I can’t even count the number of times I’ve been on the roof with no issues. BUt like Tory said, it depends. Let us know the make/model and we can help you figure it out if need be.

As for the sink, follow the line from the sink to the tank. Check for valves, kinks, leaks, etc. RV plumbing systems are pretty basic. You could also check the aerator at the kitchen faucet as they do get clogged, but I doubt that’s it since it’s a new TT.
