So, our furnace runs, heats up the RV like it should, turns off, but won’t turn back on. We have to manually turn it off then back on to get it to kick back on. Thoughts?

I’d say a faulty control board or sail switch.

I would assume if its the sail switch it wouldn’t start in the first place. I’d guess the control board needs to be replaced. If it’s still under warranty I’d take it to the dealer and have them replace it.

This exact thing happened to me back when I had a Coachmen TT. Took it to Camping World and they replaced the board. Worked fine after that.
