SInce the temps have dropped at night we get terrible condensation on our windows. I’m worried about mold issues popping up. Any way to prevent this from happening?

Run a large dehumidifier 24/7. Depending on the size of your RV it might even be better to run two smaller dehumidifiers on each side of the RV. And strategically place moisture absorbers like Damp-rid throughout the RV (in closets, storage areas, etc). These combined should take care of the problem.

The two biggest levers you can pull to prevent condensation are exactly as Bill says above.
