So, our camper already struggles to stay cool in the current heat, then add cooking inside and it becomes unbelieavably hot in there. What meals or cooking methods do you use that won’t heat up the inside of the camper so much.

First, we try to cook outside as much as possible. Aside from that, the crockpot, instant pot, and microwave are great options.

Crockpot and instapot! I usually pre-bag a bunch of meals before we leave on a trip so they are rerady to just throw in and cook.

+1 for the crockpot. And sandwiches, salads, etc. basically foods/meals that don’t need to be cooked can come in handy on those extremely hot days.
We have an air fryer but that heats up the camper just as much as our oven. Maybe its just our model of air fryer.
